Passel Estate2016 Passel Estate Lot 71 Reserve Cabernet Sauvignon
2016 Cabernet Sauvignon
Margaret River, Western Australia
Made from a single block of old-vine Cabernet Sauvignon and matured in fine French oak for 18 months.
Description
Tasting Notes: We recommend decanting this wine to reveal an olfactory wave of glazed cherries, red currants, violets and mulberries, woven into a tapestry of fine French oak tones of cedar, freshly roasted coffee and bay. Utterly fine tannin on the entry sets the stage for a journey into elegance, subtlety and texture and poise. A finish of red fruits, both flavours and textures, brought to yield by an endless line of red cherry acidity. This wine will continue to mature gracefully and can be cellared for 10+ years. Less than 150 cases were produced.
Winemaking Notes: Fruit from a single block on the estate was harvested and berries crushed (just split) and sent to a fermentor. A regime of cool fermentation on skins for 14 days with multiple, yet gentle daily pump overs was employed in order to extract every morsel of luxury tannin and flavour from each berry. When peak concentration was achieved the wine was separated from the skins directly to a special selection of the finest French Oak barriques, 58% of which were new where the wine was matured in oak for 18 months.

'" Deep crimson. Fresh blackberry, praline aromas with vanilla, marzipan notes. Richly concentrated, smooth and velvety with lovely blackberry, blackcurrant, dark chocolate flavours, supple fine grainy textures, superb inky density and underlying espresso oak notes. Finishes surprisingly soft for a claret style, with very good mineral length. Will have very wide appeal."

Brambly, briary, there's some bushy, hedgey, underbrush aromatics happening here and it's intertwined with an ample dose of blackcurrant, graphite and dark cherry. The flavours are mid-weighted and in the blue-black fruit spectrum and there's that brambly, slightly edgy, leafy (but ripe) cabernet thing happening as well. Plenty of complexity, layers and sophistication here. A very smart wine now, but best give it time to show what it can do.

Plush and velvety, the relatively late release has catapulted this into a delicate balance of both age and freshness. It’s ready to go now, although the hallmarks for ageing are there as well. Satsuma plums, briney acid and fine, shapely tannins.

This is fast developing into a high class wine as it moves comfortably into the next stage of its development. The striking feature in this reserve wine is how the tannins have been managed in this muscular year to achieve an effortless, smoothly poised palate. It’s seamlessly integrated and medium weight with such beautiful balance. A real brightness and energy lifts through the palate to a very long finish. Love the classic Cabernet mouth feel that is both firm and controlled.

"An interesting blend of aged and youthful characteristics. Mocha, smoke, and roasted coffee join cassis and redcurrant freshness."
