2017 Cabernet Sauvignon

Margaret River, Western Australia

Medium to full bodied with fine-grained tannin, velvety smooth with intense fruit flavours of red and blue berries.

    Description

    Tasting Notes: Ruby red in colour, with blue flecks. A bouquet of violets, mulberry, red cherries and lifted floral aromatics. Fine lines of pristine red fruit tannin introduce a savoury palate laced with textures of graphite, blue berries and subtle notes of cedar. Seamless and complete, the palate eases into a primal finish of darker fruits, elevated by finer afterthoughts of cherry pip and plum blossom. Drink now for freshness or be rewarded with cellaring.

    Winemaking Notes: The fruit is harvested, and berries crushed (just split). After a cool 14-day ferment on skins with multiple, yet gentle daily pump overs, the wine was gently separated from the skins and transferred straight to French Oak barriques, 35% of which were new where the wine was matured for 10 months in oak.

    A fine-featured cabernet with Margaret River class written all over it. It’s one of those wines you just want to inhale over and over, taking in the sheer aromatic pleasure of it all. Where to start? Black fruits first up of the blackberry and blackcurrant kind, ripe and concentrated. There’s camphor, vanilla, cinnamon, too, lifted and engaging. Where the 2017 shiraz is showing its age, this is not the case with the ’17 cabernet. There is so much life and energy here. Rolls across the tongue supported by velvety, fine tannins with a terrific depth of flavour meting out black berries, a gentle leafiness with an earthy allure. An added spicy touch of anise lifts. Classic shades of Margaret River cabernet and will age a treat.
