Made from a single block of old-vine Cabernet Sauvignon and matured in fine French oak for 18 months.

Description
Tasting Notes: Bracing aromas of red currants, blue berries and violets to start, further opening with time to reveal tones of cassis and wet slate. The palate enters focused and seamless, laced with tensile black and blue fruit tannin and extreme poise and persistence. A dark and brooding power lurks beneath the tight knit lattice of fruit and oak tension only to be unleashed with time. This wine will continue to mature beautifully and can be cellared for 10+ years.
Winemaking notes: Fruit from a single block on the estate was harvested and berries crushed (just split). A regime of cool fermentation on skins for 14 days with multiple, yet gentle daily pump overs was employed in order to extract every morsel of luxury tannin and flavour from each berry. When peak concentration was achieved the wine was separated from the skins directly to a special selection of the finest French Oak barriques, 58% of which were new. The wine was matured in oak for 18 months, then a further 4 years in bottle before release.

I’ve long been a fan of the 2017 Cabernets from Margaret River...a beautiful vintage of restraint and elegance. This is just starting to develop some subtle secondary notes, warm leather, spice cupboard, tobacco leaf and white pepper. There are layers of dark ruby fruit complexity, with plenty of density and concentration. Tannins are tapered and long. A very smart wine."

Doubly so when a top vintage and a wine’s ageing potential is so persuasively on show. The ’17 vintage was cooler, and it shows in a very fine expression of Cabernet Sauvignon, one with finesse and excellent natural balance. The vintage allows the fruit to sing, the winemaker encourages it with a sensitive use of oak. Violet, acacia, bush mint, black berries, plum and gentle woodsmoke aromas. The palate delivers ripe, well composed fruit with black fruits, plum and dark cherry in the lead, enhanced by dark cocoa, spice and fine tannins that run long and deep. A dry, leafy, herbal edge brings a clean finish."

It's full bodied, imperious Cabernet with the balance of fruit power, refreshing acid and tannin that only the land and climate of Margaret River can produce. Pretty fruit and briars are on the nose. That core of fruit is tempered with leather and meat on the palate. The long, cool 2017 vintage still producing a wine with plenty of ripeness to hang Cabernet's fine robes around. Our old-vine Houghton clone Cabernet Sauvignon is planted north-south, thus benefitting from even sunlight and warmth on either side of the canopy throughout the growing season. The vines are minimally irrigated, with special attention paid to achieving full solarisation and fruit exposure on each vine through rigorous canopy management and leaf removal. Each vine is then fine-tuned via the removal of excess and green bunches, resulting in perfectly uniform development of opulent tannin with intense fruit flavour and aromatics throughout the block.
