A gentle style of shiraz - black cherries, black plums, dark chocolate and a hint of white pepper, laced with liquorice, spiced meats and graphite.
From $60.00 per bottle
Description
Tasting Notes: Black berries, dark chocolate and aniseed aromas, gently lifted by hints of cherry blossom, white pepper and allspice. Utterly coating black and red fruit tannin on the entry, which is continued and amplified through the palate by soft textures laced with liquorice and spiced meats. An opulent finish of graphite and spiced black plums.
Winemaking Notes: Picked in the early hours of the morning, our Shiraz fruit was destemmed directly to the fermentors as whole berries, resulting in slower and more controlled extraction of tannin and greater retention of fruit based aromatics. A cool ferment on skins for 14 days was followed by a gentle pressing straight to barrel. The wine was matured for 10 months in a combination of French Oak barriques and puncheons, 30% of which were new, and underwent bâttonage every 5-6 weeks.

"Like a lot of the reds from this cooler Margaret River vintage, the opulence of the ’18 has been replaced by a more linear elegance synonymous with the cooler year. This is a beautifully balanced and most poised shiraz displaying a spicy plum and slightly blue fruit character. It sits in the medium bodied zone but with a tight core and generous fruit through to the long finish. A sophisticated wine."

"There’s a lot of shiraz in Australia so if you are going to stand out you are going to have to do it very well…. Passel Estate’s Shiraz 2019 does so with aplomb. Awesome aromatics lead to plum, violet and bright red fruit flavours on tasting. The wine has density, despite the cool vintage, and effortless power manifested in the tannins which are gentle but sophisticated. Subtle winemaking included whole berry fermentation, 10 months aging in new and old French oak using fruit from dry grown estate vineyards. High likeability, this has quaffable appeal but also plenty of nuance."

"What pretty Shiraz all perfumed and peppery, colour appears advanced for its age but the palate is so seductive. Warm plum compote, white and black pepper and a Rhone-esque lift – more Syrah than Shiraz. Silky palate with earthy savoury tannins, my kind of Syrah, medium bodied and juicy with perfume and exotic spice adding to the spine of flavour."
